Born 1960 in Southampton, Hampshire, Gilling served from 1977 to 1985 with HM Royal Air Force. He spent the subsequent ten years living and working in Berlin, earning his keep as a waiter, gardener, dancer, painter and photographer. For the past twelve years he has been based in Edinburgh, Scotland, where he continues to paint and photograph.  He graduated from Edinburgh College of Art in 2004.
